CHEESY CHICKEN BEAN DIP/SPOON NACHOS


No one ever said Refried Beans were particularly photogenic, not even Mrs. Refried Bean but they are Quite Delicious and these are the canned kind from Goya which speaks volumes of their Greatness.

Pictured above was my second attempt at Bean Dip with some Ingredients thrown in literally to jazz things up but mainly I had to use up a Bermuda Onion and Tomato and had some Chicken Cutlets taking up room in the Freezer as well as a Huge open bag of Tortilla Chips. 

Bean Dip should be mostly Bean but thus far its about fifty fifty if not sixty Stuff and forty Beans, Still Quite Tasty, heck I ate it two days in a row, tonight with Pita Bread and last night, well,... 

lets check that out below.


On the train ride home I concocted the Chip brained scheme to make a Nachos you can eat with a spoon idea and a Lot of Chips go a little ways as I found out after crushing them up accordingly.


Step 1 - Crush a bunch of Chips and place in a microwave safe bowl (if you plan on heating these up which I highly recommend). I put mine in a plastic bag, after all part of the reason I wanted to eat with a spoon is so I don't get all that Cheese Powder on my fingers.

A plain unflavored Tortilla Chip would work better but I had Nacho Cheese Flavor on hand and lots of them as in 11 ounces worth (heck, they were on sale).


Step 2 - You don't want a bowl of crushed Tortilla Chips with everything on top so I decided to layer my concoction.

Atop Chip layer one (of 2) as you feel fit, I used Refried Beans, Cheddar Cheese, Bermuda Onion and Hot Pepper Slices then topped with more Chips.


Step 3 - Atop the second layer of Chips I placed Diced Chicken Breast, Cheddar Cheese, Diced Tomato and Bermuda Onion.

Afterwards I realized I forgot the Hot Sauce, this I added afterwards and wound up stirring the mixture up quite a bit anyways.

Microwave for at least 2 minutes, if all the ingredients have been refrigerated overnight you might want to double that time. 

I wish I had some Sour Cream.

PIZZERIA UNO 12/6/14 Brooklyn, New York


I have been wanting to try Pizzeria Uno for years specifically because they make the Chicago style Deep Dish Pizza but after viewing Jon Stewart's "Rant" on New York Versus Chicago Style Pizza It only escalated my interest. 

Well, Jon was completely right in my opinion insofar as a "Deep Dish" does not conquer a "Slice" but now I know for myself. 

The Deep Dish was Great, actually kind of like a Sicilian square but in a Pie form, no complaints at all and I only conquered one Slice as it was preceded by the Sliders pictured below but I do have four slices in my Fridge A La Leftovers. This was the first time in my life that I actually had to Eat Pizza with a fork and a knife.

Nuovo Deep Dish Italiano (pictured above) - Italian Sausage, Roasted Vegetables and Chunky Tomato Sauce topped with Mozzarella, Ricotta and Fresh Basil just like the menu says, Did I like this ? Yes I did.


Guac, Chips & Dip - Well as the Menu says this is exactly what this appetizer is, Basically it is Guacamole, Chips and Dip consisting of Creamy Guacamole, multi-colored Tortilla Chips and Spicy Salsa Dip, exactly the type of thing you cannot stop picking at even realizing that the real Food is coming to your table shortly.


Burger Sliders - Cheddar Cheese topped mini Burgers served with "Ultimate Burger Sauce" but where was the Sauce ? it certainly passed me by but on the other hand I was too busy chowing down to notice even though I was in anticipation on trying said sauce as touted on the menu. 

Served with a Pickle.

OK, Who buys a Burger for the Sauce,... these were quite good.

COLADOR CAFE, 10/29/13 Brooklyn, NYC


We arrived at Black Swan only to find that the Dining room and Kitchen was closed between the hours of 4 p.m. and 5 p.m. and expecting Food mostly and Drinks secondary we decided not to wait So we found Colador Cafe which had a 5 star rating online and sequestered ourselves there. firstly what an Odd Menu, there were Empanada's, Lasagna, Burgers, Wraps and Quesadilla's on offer, What kind of place is this !!!

Pictured above for starters is a Plate of Salsa And Chips, Always Good. the Salsa in both Ramikens (Thanks Jennie) was the same. Acceptable Quality for both, Much more of a Pico De Gallo in my opinion.


Beef Empanada - No Complaints but this does not rival the Spicy Chicken Empanada from Jamian's just a week or so before. Tender Chop Meat and Veggie Slivers, However No Dipping sauce and just one Empanada.


The Cheeseburger was indeed something to speak of. just a homeade Beef Pattie that any of us would make from Ground Beef (Chop Meat) at home but cooked to perfection, I ordered my Burger Medium Well and it was just that, No Charred outer layer and cooked through and through, topped with (2) thinTomato slices, Greens, Bermuda Onion and almost Caramelized Onions on a Grilled  Roll with Seasoned French Fries on the side, Delicious.

PANCHO'S RESTAURANT 8/24/13 - Brooklyn, New York


Homeade Food, Quaint Atmosphere and Reasonable Prices makes Pancho's my favorite Brooklyn Mexican Eatery. You can Dine Al Fresco in the festively painted walled in backyard area or up front in the Dining room surrounded by Groceries and Soda machines, Perfect (all sarcasm aside).

Jamie, Joe and myself sauntered over for Dinner after some Delicious Cocktails at Joe's on this Saturday evening and opened with an order of Guacamole and Tomatillo ($4.00) (pictured above). To drink we all got Jarritos (made with Sugar and no high Fructose Corn Syrup) Soda. Joe and me got the Lime rendition but Jamie got the Mandarin (Mandarina) Orange Flavor which tasted just like Orange PEZ, I have since bought a 1.5 Litros bottle that sits in my fridge as we speak.


Jamie got the Enchilada's but they did screw up her order as she had requested a Cheese Enchilada which was absent but the Enchilada count remained the same (3 for $9.00)


Joe's Taco order was also incorrect concerning which Mole sauce on which Taco but once again with Food this good it was not worth sending it back (back, back to 1967 on Venice Beach) (3 for $7.50)


I am going down the Menu and trying Everything, This time it was the Bistec (Steak) Chilaquiles ($6.00) and we all agreed that the Rice and Beans were done to perfection, The Chilaquiles were Tortilla Chips bathed in Red Salsa topped with Lettuce, Sour Cream and Cheese (not sure what kind of Queso).


Possibly the Largest Pork Rind known to man (or woman) was for sale on the counter, This must have measured 8x15", as a reference the "soup" container pictured behind this is a Quart size of which contained the Real Deal Chicaronnes (Pork Rind) and I regret not purchasing it. I did though ask about the glass rooster they used to have on display and showed our chefette' my photo via iPhone. Her reply was "it's in a box somewhere" which is fine by me, with food like this let the rooster crow happily and with a full belly.

PANCHO'S RESTAURANT 9/29/12 Brooklyn, New York



Authentic Mexican Food can be found very commonly in New York but some places are just Wonderfully Delicious, Pancho's is one of these places. The Good Yeggs were playing on the corner at the Three Jolly Pigeons Bar and arriving just early enough to grab a quick bite.

The Tinga Sopes retained too much of the Corn Tortilla (or in this case Sope) flavor but I knew that as I read the menu, Delicious but too "Corny" for my western palate.

O' FLANAGANS 6/30/12 New York City


The menu states clearly "ALL burgers served with French Fries" but the Mexican Burger comes with Nacho Chips and Salsa (I wanted all of this plus Fries) instead, Luckily Jamie's Chicken Fingers came with Fries.

Last time I had a Burger here it was Delicious, this time the bread was a tad stale. The Mexican Burger comes topped with Cheddar Cheese, Salsa, Scallions and fresh JalapeƱo that have a real kick.
