WEIRD TACOS INSIDE THE GOLDMINE


Rice-A-Roni, Tomato, Spanish Olives, Jalapeño Pepper, Pimento flanked with Avocado topped with Codjita Cheese, Iceberg Lettuce topped with Sour Cream and a Stuffed Grape Leaf.


Refried Beans, Ground Beef, Tomato and Deli American Cheese and Iceberg Lettuce topped with Sour Cream with a couple of Ore-Ida French Fries on the side.


SPAM and American Cheese flanked by Iceberg Lettuce Korean Bean Paste.


Chicken Cutlet, Refried Beans, Tomato, Diced Onion topped with Codjita Cheese. Flanked with Iceberg Lettuce topped with Sour Cream and Fresh Jalapeño Pepper.

Sausage & Peppers (Frank & Sals), White Cheddar, Trappeys Hot Sauce, Fresh Jalapeño Pepper. Flanked by Iceberg Lettuce & 2 chunks of Provolone Cheese.


Chicken Cutlet, Refried Beans and a Cheese of an undeterminable nature flanked by Iceberg Lettuce and Sharp Provolone Chunks.

"Picture If You Will" THE AVOCADO


Oh Mrs. Avocado, Is there anything you cannot Do ?

The Avocado (Persea Americana) is thought to be native to South Central Mexico with cave painting evidence of its existence to our current knowledge dating as far back as 10,000 B.C.

I just know that I Love Em'


A lovely Avocado half served with a Tostada and Spanish Onion, Arroz Amarillo (Yellow Rice), Refried Beans (with Chorizo), Iceberg Lettuce, Jalapeño, Grated Pecorino Romano Cheese (close enough for my needs as a Manchego substitute) and Alcaparrado (Manzinilla Olives with Pimiento & Capers).


Some lovely Avocado Slices served with a Flour Tortilla and Refried Beans (with Chorizo), Arroz Amarillo, Ground Beef with Sautéed Onions & Garlic, Grated Pecorino Romano Cheese, Sliced Tomato and Jalapeño.


A few more lovely Avocado Slices served with BACON, Iceberg Lettuce, Arroz Amarillo, Refried Beans, and Jalapeño atop a Tostada.

BACON plus AVOCADO might make the top of the Awesome list.

A PLACE FOR MY STUFF"ING"


Sausage Stuffing,...

This comes up time and time again and year after year especially during the holidays and I always get an extra helping (if I can help it) because how can you really go wrong. 

I actually only just made my first batch ever without adding any "extras" except for Sauteed Garlic and Loved it.


Well perhaps I fib, I did add one of my latest obsessions the Jalapeño Pepper (uncooked) as a Crunchy Veggie topping that actually complimented this uncomplementable dish.

I blame my friend Caroline for pushing me over the edge after Stuffing the Bird at Thanksgiving 2016 with some Sausage Stuffing.

Who Needs Turkey ? 
Hand Over The Stuffing.

TRUCK ON TYKE - TACOS LOPEZ TACO TRUCK


Chorizo Burrito (The Anderson)

I was not surprised at all that this was an Outstanding Burrito being no stranger to Taco Trucks but once Mr. Kenneth A. highly recommended Tacos Lopez to me it gave me an extra Bread(th) of interest in That Truck which has been lurking around on That Corner.


A wide variety on a limited Menu. 

They also to my knowledge have Nachos, Tostadas & Quesadillas on offer.


One (1) Chorizo Burrito ($9.50) untouched.

 This was completely Delicious and done to perfection, as I often say "This can be equalled but not bettered"

Stuffed with Chorizo, Yellow Rice (with Corn and Peas) & Cilantro pillowed in a Flour Tortilla but I cannot find a trace of the mandatory Beans. This might be done on porpoise due to the Tanginess of the Chorizo, Either way this is not lacking from the loss of such ingredient.



Roast Pork (Al Pastor) & Chicken Tacos ($1.75 ea.) done proper and most Delicious.

Both Packed with Cilantro & Onions aside from the prime Ingredients. Further servings (post-maiden voyage) have come up minus the Pineapple making it less "El Pastor" than previously but I will keep on trying as the Pork was Fantastic not to mention the Pollo (Chicken).

Not to be Ghostly but the First time I tried "Al Pastor"/Roasted Pork there was Pineapple and subsequent tastings have been lacking the Tropical Fruit.

Flanked by Salsa Verde and Tomato Salsa.


2/27/17 - Regular Tostada ($3.50) - Lettuce, Tomatoes, Refried Beans, Crema & Cojita Cheese.

The jury is still out on this one, I ordered a Vegetarian Tostada Eight days later and got the same exact thing, Menu might be wrong, who knows, Delicious,... YES !!!

I can go Vegetarian or Regular, either way I win.


Campechanos Taco ($2.00) - Lots of Cilantro, Onions, Roast Pork, Chorizo and maybe some Chicken. Campechanos is roughly translated as "Folksy" and also "Two Meats or more".

Perhaps the best Taco on the Menu thus far.


3/7/17 - Spicy Meat (enchilada) Taco ($1.75) - Basically a Steak Taco with mild Spiciness, was it good,... OH YEAH.

I also ordered a Vegetable Tostada on this day and it was the same as the Regular Tostada.
An Enigma to be answered.


3/9/17 - Vegetarian (vegertarianos) Taco ($1.50) - Rice, Beans, Lettuce, Cojita Cheese & Crema. 


Carnitas Taco ($1.75) - Oh My Lord, Like Mexican Bacon.
On a Taco, Carnitas, Onion & Cilantro.

MEXICAN BACON !!!


Salty Beef (Cecina) Taco ($2.00) - Steak, Onion, Cilantro.
Very Indeed Salty Steak but not too much Salt. 

As much as I respect this truck they probably just added a few sprinkles of extra Salt to the mixture.


Pico De Gallo/side order (50 cents apiece) - Well waddya want for 50 cents. A bit Spicy for Picco De Gallo which I am usually accustomed to as a refreshing very mild and Crisp Veggie mix. 

No complaints here though.

My Wonderful friend Carrie saw my distress call on Facebook and was so Sweet to send me via post an assortment of the Cadbury "Oreo" selections to procure.

THE LAFFA BREAD MADE ME DO IT


I Blame this all on the Laffa Bread.

This barely warrants a posting but well,... The Laffa Bread even it being from a package does warrant a posting. I had a "Eureka" moment and decided to use Ground Chicken as opposed to "Chop Meat" (Ground Beef) and this came out gangbusters.


Speaking with my friend Stanley on all things Bread we were discussing the Pita Bread without the pocket and yes I was familiar with this as well so when I came across a possible candidate at the local corner store I took a chance and was correct in my purchase, cloud like puffiness and lacking of a pocket, just what the Chef ordered.


Caramelized some Onions, Peppers and quite possibly Garlic.


With the addition of a Hot Sauce extravaganza courtesy of my Christmas gift from Christina this topped it all off.
